Fast and Easy Seafood and Fish Salad Recipe
• Cut your fish into one inch cubes
• Drop the fish cubes into a pot of boiling water and remove the pot from the heat (make sure there is enough water to completely cover all your fish)
• Stir the fish once & let stand for 4 minutes - the fish will be well cooked by then.
• Remove the fish from the pot of water & let cool
At this point, you are now ready to add dressing to your seafood/fish salad. Simply use your favourite salad dressing or, try the following dressing:
• Squeeze the juice from 1 lemon
• Add 6 tablespoons of virgin oliver oil
• Add one clove of finely minced garlic
• Add salt & freshly ground black pepper to taste
• Mix all the above ingredients & toss with your fish
• Repeat the above until such time you have made enough dressing to cover the portion of fish you have prepared.
To further enhance your Seafood/Fish salad, feel free to add such things as chopped celery, chopped Anise or even shredded carrot.
As far as what type of fish to use, you can use any fish at all, which includes shell fish also. Try taking your catch of the day & add some crab meat, shrimp, scallops, and/or calamari. Cut them all up into one inch cubes & follow this same recipe. You will have a dynamite seafood salad which I am sure will be enjoyed by all.
