Delicious Perch with Onions

Delicious perch recipe.

Ingredients for one serving:

1.6 boneless, skinless perch fillets - washed & paper towel dry

2.½ small cooking onion thinly sliced

3.Olive oil

4.Butter

5.Salt

In a frying pan, add onions and enough olive oil to sauté.
Under medium heat, salt and periodically mix & turn onions until they become golden brown.

While the onions are cooking, prepare another pan & add 1 tbsp butter and a little olive oil to cover the bottom of the pan. Under medium heat, stir to blend butter and oil and add fillets when hot enough. Do not use a lid. After 2 minutes salt and turn fillets and cook for another 2 minutes - add a little more salt if you wish.

Remove fish from pan and place on a plate. Place onions evenly on top of the fillets and enjoy!
